In May of 2007, I was introduced to macrobiotics by David Snieckus.  My health had deteriorated following multiple treatments for NHL and I had been diagnosed with MDS in June of 2006.  There were no treatments available for my MDS other than blood transfusions.  The transfusions, although life saving, caused iron toxicity.  I had hoped by changing my approach to eating that I would slow the increase in iron.  Between May and August I was able to slightly reduce my ferritin levels with the only change being my style of eating.

Dear David, Holy smokes. God bless you and your family. I don't think I've ever felt as strong, whole and full of vitality as I have in the past few days. The experience of spending an afternoon learning from you, and being in the presence of your wonderful family, was powerful - joyful, illuminating, wonderful. I have a picture in my mind of you and your wife and your daughter in your kitchen, healing the world around you, and I am awed by my good fortune in sojourning in that kitchen. I understood the paradigm shift that had taken place for me by spending even a few hours with you and your family. I had gone from feeling that cooking was a struggle, to feeling that cooking was a joyful adventure. Now that is a leap. Having been treated with low back pain and related depression by various medical practitioners for nearly two years, I began working with David. It's been about 2 months since he introduced me to Macrobiotics. To say I am amazed at how I am feeling does a great disservice to this new way of life for me. I have drastically cut down on the amount of medications that I take, have lost weight (without even trying), and feel a general sense of well-being with a noticeable amount of increased energy. As an added bonus, I even sleep better! David is enthusiastic, knowledgeable and makes the wonderful world of macrobiotics so easy to adapt to a busy lifestyle. I feel so much better! The food was fabulous, even better than we had imagined, everything we had hoped it would be, and it was a huge success with our guests. Dave's daughter had never eaten macrobiotic before, and also has a stomach capacity problem due to bypass surgery, and yet she cleaned her plate and even took seconds, for the first time in years. My daughter and her partner are very familiar with macrobiotic food, and pronounced it superb. They and Dave and I loved it all.... The beans were creamy, the vegetables flavorful, the salad crisp and not salty, the rice perfect. We also appreciated the selections and the variety. The kanten was a perfect finish, delightful; everyone scraped their bowls. It was a splendid meal, and greatly enjoyed by all. It was the nicest birthday present I can imagine receiving!

After three years of chronic urinary tract infections and countless antibiotics, I sought surgery, which helped in some ways, but didn't in others. The surgery caused some new problems as well, so I finally got around to trying anything that might possibly help. After eating David's macrobiotic food for two weeks, ALL of my symptoms cleared up, and I finally felt energized after eating, instead of tired and worn out as I had in the past. I can't get over how your suggestion for me to change the sea salt I was using to Celtic Sea Salt has brought me such wonderful results. 

Before I start my story I must tell you that my symptoms started after I had begun working in a corporate office in NY where they stocked junk food in the pantry and I had several helpings of the msg, sugar and hydrogenated laden goods daily.  Along with coffee, cream & sugar.  This environment was also psychologically stressful.  After almost 3 years I left this place and began eating healthy foods most of the time.

For about 5 years now, I have been jogging, exercising reducing my food intake, etc. to lose weight.  All to no avail. I didn't even take off a pound.  (This problem started while I was in New York. I now live in Los Angeles and nothing changed in reference to my concerns. I remember I ran around Central Park for a whole month without losing an inch).

On our first phone consultation, after telling you my health and vanity concerns, and that I had been on Macrobiotics before, you asked me what kind of sea salt I was using.  I told you that it was just the dry sea salt that I got at the health food store in the bulk section for about 69 cents a pound.  You said that it was probably not a good quality sea salt and suggested I change to either Lima sea salt or Celtic sea salt.  I had Celtic in my kitchen, though had never used it.  That night I used it in my cooking and felt an immediate sense of well being.  The next day I noticed the swelling in my ankles (which I had developed close to about 5 years ago) suddenly diminished.  In 3 days the swelling was gone.  I could see the definition around my ankles again.

I felt like jogging.  After the first day of jogging 2 miles, I could feel and see my thighs taking on a stream line effect (I usually, lose weight very quickly when I jog when I am healthy; when I didn't lose weight after a whole month of jogging around Central Park in NY, I knew something was wrong, but did not know what).  After 3 days of jogging I noticed the extra weight (fluid) around my face/neckline was disappearing.  All of this from switching the sea salt I was using?  The delicious recipes and the wonderful confidence you have instilled in me has certainly affected this great change as well. 

For sure, I was familiar with Macrobiotics and have had great success with it in the past, but the right Macrobiotic counselor can save you years of grief.  I needed the counselor that I clicked with.  David for this time in my life, you are it.  Thank you David.  I look forward to telling you about the other good things that are happening.  - MW
